Here is another traditional favorite that everyone will love.
Preheat oven 375 degrees F. In a medium bowl, combine onion, garlic, parsley, egg, and half of the tomato paste. Add breadcrumbs and beef. Season with salt and pepper. Mix until well combined. Place mixture in a 6 cup capacity loaf pan (8 x 14 in). Bake meatloaf for 50 minutes. Remove from oven; brush with remaining tomato paste. Return to the oven; bake until an instant-read thermometer inserted into the center of the reads 160 degrees F, approximately 10-20 minutes. Cool meatloaf for 10 minutes in the pan before slicing.
